नवरात्रि व्रत स्पेशल थाली
1️⃣ Stuffed Sabudana Vada (भरवां साबूदाना वड़ा)
Ingredients सामग्री
Sabudana (साबूदाना) – 2 cup (soaked 4-5 hrs)
Boiled potatoes (उबले आलू) – 4 medium
Green chilies (हरी मिर्च) – 5 finely chopped
Rock salt (सेंधा नमक) – as per taste
Peanuts (भुनी मूंगफली) – 5 tbsp (crushed)
Oil (तेल) – for frying
For stuffing भरावन के लिए
Green chili + Ginger paste (हरी मिर्च + अदरक पेस्ट) – 4 tsp
Coriander (धनिया पत्ता) – 4 tbsp
Method विधि
- Mix soaked sabudana, mashed potatoes, peanuts, chili & sendha namak → make dough.
- For stuffing, sauté peas with ginger-chili paste & coriander.
- Take small portion of sabudana mix, flatten, stuff with peas & shape into vada.
- Deep fry on medium flame till golden & crispy.
2️⃣ Sabudana Khichdi (साबूदाना खिचड़ी)
Ingredients सामग्री
Sabudana (साबूदाना) – 2 cup (soaked 4-5 hrs)
Boiled potato (उबला आलू) – 4 chopped
Green chili (हरी मिर्च) – 4
Curry leaves (कड़ी पत्ता) – few (optional in vrat)
Peanuts (मूंगफली) – 5 tbsp roasted
Sendha namak (सेंधा नमक) – as per taste
Ghee (घी) – 4 tsp
Method विधि
- Heat ghee, add green chili, curry leaves, and peanuts.
- Add boiled potato cubes & sauté.
- Add soaked sabudana, sprinkle salt, stir continuously.
- Cook till sabudana turns transparent & fluffy.
- Garnish with coriander & lemon juice.
3️⃣ Sabudana Kheer (साबूदाना की खीर)
Ingredients सामग्री
Sabudana (साबूदाना) – 4 cup (soaked 30 mins)
Milk (दूध) – 1/2 lettre
Sugar (चीनी) – 2 cup (or as taste)
Cardamom powder (इलायची पाउडर) – 3 tsp
Saffron strands (केसर) – few
Dry fruits (सूखे मेवे) – almonds, cashews, raisins
Method विधि
- Boil milk in a pan, add soaked sabudana.
- Cook on low flame till sabudana turns soft & translucent.
- Add sugar, cardamom, saffron & simmer for 5 mins.
- Garnish with dry fruits. Serve warm or chilled.
